Hello, Betty Crocker Packet Mix!
Having taken all of the ingredients out of the packet, I realised that the provided cupcake holders were never going to give me the pretty round cupcakes that I wanted. So, I substituted them for some plain white ones, that were straight out of the tub and perfectly round!
So, first things first. Set the oven to 180°C / 160°C for fan assisted ovens / Gas Mark 4. I was working with a gas oven, so Mark 4 it was… If I could find it!
Next, mixing the cake.
The cake mix, 2 medium eggs, 60ml (4tbsp) water and 30ml (2tbsp) vegetable oil went into the bowl and were whisked for 2-3 minutes. I don’t have an electric whisk here with me at uni, so this was whisked together using a bit of good old elbow grease.
Once smooth, I carefully spooned the mixture into the cupcake cases (that were already sat in a bun tin / cupcake tray). The box says that you should get 9 cupcakes out of the mix. I spooned out 12 to fill the tray. Plus, my cases were smaller than the ones they had provided.
The icing mix went into the bowl with 60g of soft butter. After a little bit of whisking, I realised my ‘good old elbow grease’ wasn’t quite good enough to cut it here… so I got out my silicon spatular and mashed it together for a few minutes until all the butter had been combined with the icing mix.
Easy peasy! 12 gloriously delicious chocolate cupcakes!
It’s really a shame that my housemates aren’t around. There are 10 yummy cupcakes to devour. Oh well. I doubt it will be a hardship devouring them by myself! (I will only be having 10 of 12 as one shall be going to my mum and one to my younger brother)
